Bourbon Biscuits

My boys loved bourbon biscuits when they were young or Borgons as they called them. One of the boys used to just eat the filling and leave the biscuits. I was never keen on the shop bought variety and this is why we always had them in, to save my waistline but it never worked! Anyway these are my homemade ones. I love these, so no help to the ever expanding waistline! I really hope you enjoy them too.
Makes about 18-20 sandwiches

250g plain flour
100g caster sugar
180g soft butter or stork
50g cocoa powder

120ml double cream
110g dark chopped chocolate
60g milk chopped chocolate

In a freestanding machine set with the paddle beater or a food processor bring all of the ingredients into a soft dough. Take a quarter of the dough and roll on some parchment to about the depth of 7mm stamp out your dough and place on a lined baking tray, repeat until all the biscuits are cut out. Pop into the fridge and chill for at least half an hour.

Now make your filling, gently heat the chopped chocolate and cream together in a pan, stir until shinny, pop into a shallow wide dish in the fridge to firm. Preheat your oven to 170

Bake your biscuits in the preheated oven for 12-14 mins. Remove from the oven and leave to cool completely.

Spoon your chocolate filling into a piping bag fitted with an open star nozzle, pipe a line along the centre of half of your biscuits and sandwich together with the un-filled halves, dust with a little icing sugar if desired.
