Pork Ribs

I'm always searching for different ways to make things so I thought I'd try cooking ribs by creating a steamer using foil and cider. The cider really helps to tenderise the meat as it cooks. The rub will probably make at least double or more of what you need but it's great with it being the BBQ season to rub on chops, steak or chicken. Just store any extra rub in a clean jam jar.
Rib rub:-
4 tbsp brown sugar
2 tbsp smoked Paprika
1 tbsp onion granules
1/2 tbsp garlic salt
1 tsp dried thyme
2 tbsp sweet Paprika
1 tsp chilli flakes
1 tsp ground cumin
1/2 tsp ground black pepper
2 racks of meaty pork ribs
Large bottle of cider
BBQ sauce (Homemade or a decent shop bought one)

Mix all the rub ingredients together to combine, rub over the rib rack/s leave for at least 3 hours for the flavour to develop.

Preheat the oven 210˚c

Place a wire rack into a deep roasting tray, lay the ribs on the rack, pour the cider into the roasting tray making sure it doesn't touch the ribs, cover the whole tray with foil making sure there isn't any gaps.

Roast the ribs for 40 mins then turn down the oven to 110˚c or place in the simmering oven of the AGA, leave for at least 3 hours. Remove the ribs from the oven and brush all over with BBQ sauce, turn up the oven to 200˚c or place in the roasting oven cover with the foil and roast for 30 mins, uncover the ribs, brush with some more BBQ sauce and roast uncovered for another 10-15 mins. Thicken the juices over the heat to reduce, then pour over the ribs to serve.
*For a more sticky rib keep covered for the whole time and add 2 Tbsp of honey to the BBQ sauce.
