Rocky Road Pavlova

We had yet another Birthday celebration last weekend and to be honest I felt like I needed to bake something other than cake. So I opted for a Pavlova, but not your ordinary pav. 

This was an all singing all dancing pav. A real crowd pleaser. It should serve 8-12 people depending how greedy your lot are. It served 6 here (with seconds).
I also added some indoor sparklers for added wow factor.
7 egg whites    
350g caster sugar
30g cocoa powder
Handful of malteasers
Handful of chocolate covered popcorn
Handful of either new cadbury pebbles or minstrels
Handful of marshmallows
600ml of softly whipped double cream
100g melted milk chocolate
1 punnet of strawberries chopped in half and de-stalked

Preheat the oven to 150ºC


In a spotlessly clean and dry bowl, whisk the egg whites to a stiff peaks. Gradually add the sugar until incorporated and the meringue is thick and glossy. Be careful not to overwhisk the whites. 

Spread two thirds of the meringue out into a  round, approximately 10 inch in diameter on the prepared baking sheet. Fold the cocoa into the other third of the meringue mixture  until completely combined. Spoon blobs around the circumference of the white meringue. 

Place on the middle shelf of the preheated oven, turn the temperature down to 110ºC and bake for 3&1/2 hours until the meringue is pale and crisp. Leave to cool completely in the oven. 

To assemble, drizzle the cooled meringue with half of the melted chocolate, spoon on the whipped cream, now in a large bowl mix together all of the other ingredients except for the strawberries and remaining melted chocolate. 

Pile on top of the cream, next add the strawberries and finish with a drizzle of the remaining chocolate.
