One of my all time favourite bakes, this is such a simple bake and everyone loves it. If you don't love pecans just replace with walnuts or leave off completely.
2 bananas (mashed)
280g plain flour
2tsp baking powder
140g melted butter
50g chopped pecans
2 tsp cinnamon
2 Tbsp demerara
Preheat the oven 170˚c
Mix sugar and eggs together until well combined.
Add the mashed banana.
Fold in flour and baking powder. Finally stir in melted butter .Spoon into prepared 2lb loaf tin.
Mix together chopped pecans, demerara and cinnamon. Sprinkle onto the top of the cake mixture.
Bake in a preheated oven for an 50-60 mins, if it darkens too quickly cover with foil.
*You could add a handful of chocolate chips.
