Lamb Koftas and Lebanese Salad

My youngest son Dylan asked for these last week. So, as normal when I haven't made something before, I had a little search around and decided what our tastes are and devised these. I served ours with a Lebanese salad and some slow sautéed veggies. The boys also had some fries with mayo and a little ground cumin sprinkled over.
Makes 10 koftas
800g minced lamb (best quality)
2 cloves of garlic
1/2 a large red onion diced
1 tsp of cumin seeds
A small handful of fresh mint
A pinch of dried chilli flakes
1/2 to 1 tsp of salt
2 tbsp oil

Start by gently frying the onions until soft, leave to cool slightly then pop into a food processor, add the mint leaves, chilli flakes, cumin then grate in the garlic, pulse until you have a paste, add the mince, season and pulse for 5 very short bursts, turn out and roll into a fat sausage, divide into 10 pieces and shape into sausage shapes, slide onto skewers, with your fingers make little indentations all over the kofta's chill until ready to grill, heat up the BBQ and cook over a medium hot heat for about 3-4 mins each side.

For the Lebanese salad
Half a deseeded Cucumber
1 deseeded Red pepper
1/2 a red onion
Handful of mint
Handful of flat leaf parsley
A grated clove of garlic
1firm deseeded beef tomato
A good glug of olive oil
Juice of a lemon

Dice all the veggies into tiny pieces, de-stalk and chop the herbs, toss into a bowl, in a jar mix together the oil, lemon juice and garlic, pour over the salad, leave at room temp for at least an hour for the flavours to develop.
