Black Cherry, Cacao & Hazelnut Clean Oaty Bars

Week 5 of my diet brings these Oaty delights, along with the fact I had some gorgeous fat black cherries from M&S that I wanted to bake with.

These are really delicious, please don’t expect them to be sticky like a regular flapjack (they won't be as the sugar and fat content is almost non existent) but the outer edges are crisp and the centres are soft and squidgy.

They are fab served with a dollop of fat free Greek yogurt and some berries for breakfast or pudding (you can also warm for 30 seconds in the micro) or just as they are.
200g oats
120ml milk (any milk works)
1 tbsp coconut oil
2 tbsp flax seed milled
3 tbsp agave
2 large ripe bananas
2 tbsp cacao nibs or chopped hazelnuts or both
20 cherries stoned and halved

In a pan heat the milk, coconut oil and agave, add milled flax seed and cacao, stir and leave to swell and cool for 5 minutes.

Blitz bananas and milk mix in a food processor, pour over oats and hazelnuts (if using), mix well till oats are combined, spoon into a lined springform tin, stud with cherries, bake at 160˚c for 30 mins turn the oven up to 180˚c and bake for another 10-12 mins until the edges start to crisp and the centre turns golden.

Cool in the tin for at least 10 minutes before cutting into 8 triangles, chill in the fridge until ready to serve.

This week's weight loss 2lb

*The recipe will also work with damsons or blueberries, Dried apricots or Cherries too.
