Charlotte Russe

This week on The Great British Bake off we saw foods fit for a Queen and lets be fair Mary (Berry) is the Queen of all things baked. A true lady who is beautiful inside and out.

That said I have cut corners here with my recipe, (using shop bought sponge fingers and a quick and simple mousse) one’s that if I were presenting to Mary (and Paul) on the Bake Off alter I may not have made, but we are all busy and sometimes a little corner cutting can be good. 
30-36 sponge fingers depending on the size of your glasses(I used Sainsbury taste the difference) 
350 ml double cream 
400g strawberries
50g caster sugar
1 tsp vanilla extract
8g powdered gelatine 

Start by lining 6 small drinking glasses with cling-film, next line with the sponge fingers curved side facing outwards. 

In a food processor whizz together 200g of the strawberries with the caster sugar set to one side. 

Now heat the double cream and the vanilla to just before boiling point, put to one side for 5 mins before whisking in the gelatine until all the lumps have dissolved. 

Fold in the strawberry puree and pour into a jug.  

Set the largest 6 of the remaining strawberries to one side and dice the rest,  divide the diced strawberries between the lined glasses. Now divide the mousse between the 6 glasses. 

Chill for at least 2 hours, remove from the glasses and cling-film, tie with a ribbon and top with the remaining strawberries and maybe a mint leaf.
