Windfall Crumble Cake

I love this time of year when there's an abundance of free fruits. My Father-in-law always pops over with bags of apples, there are blackberries growing everywhere I walk with Otis and my friend has the most giving plum tree known to man.
60g plain flour
30g butter
3 tbsp Demerara sugar 
175g softened butter or stork 
175g soft light brown sugar 
3 eggs
250g S/R Flour 
1 tsp vanilla extract
1-2 tsp ground cinnamon 
4 tbsp of double or sour cream 
3 plums halved 
15 blackberries 
2 apples, peeled, cored and quartered 
Preheat the oven 170
22cm springform tin, greased and lined

Start by combining the plain flour, 30g butter and Demerara sugar together. Next Beat the brown sugar and butter together, until light and fluffy, then slowly add the eggs one at a time. Fold in the flour, cinnamon, cream and vanilla.

Spoon into the prepared tin, arrange the fruits on the top, then cover with the crumble mix. 
Bake in a preheated oven for 45-55 mins or until a skewer comes away clean when poked into the centre. 

Cool in the tin for 10 minutes before cooling completely on a wire rack.
