Toffee Apple Crumble

Traditional, delicious, comforting. There's a reason this dish has stood the test of time and has been a favourite in so many homes for so many years. I've given this classic a bit of a twist adding a toffee flavour which gives a gorgeous depth of flavour. 
6 small or 4 medium cooking apples, peeled and cored 
2 dessert apples, peeled and cored
70g soft brown sugar
60g butter
1/2 tsp cinnamon

For the crumble
200g plain flour
60g crushed amaretti biscuits
150g unsalted butter, cubed
80g demerara sugar 
20g white sugar

You will also need an ovenproof pie dish.

Preheat the oven to 180ÂșC

Dice the apples and place in a pan with the butter, sugar and cinnamon. Cook gently until the apples become tender, remove the apple from the pan with a slotted spoon into an ovenproof dish. Pop the pan back onto the heat and reduce the liquid down by half and pour over the apples. 

To make the crumble, combine the flour, butter and sugars in the bowl of a food processor and pulse until you have a crumble texture, add the crushed biscuits and stir. Sprinkle over the fruit and bake for 30-40 minutes until the fruit is bubbling and the crumble is golden. 

Leave to stand for 5 minutes before serving.
