A bit of a twist on an old favourite. I give you my updated banana loaf. You can also chuck in a glug of rum with the melted butter if you fancy.
150g soft brown sugar100g dark brown sugar
2 eggs
2 bananas (mashed)
230g self raising flour
30g cocoa
1/2 tsp baking powder
140g cooled melted butter
80g chopped chocolate pieces (I like dark choc)
2 Tbsp dessicated coconut
2 Tbsp granulated sugar
Preheat the oven 170˚c
Mix sugar and eggs together until well combined.
Add the mashed banana.
Fold in flour, cocoa and baking powder. Finally stir in the cooled melted butter and then stir in the chocolate chunks. Spoon into prepared 2lb loaf tin.
Mix together the dessicated coconut and granulated sugar. Sprinkle onto the top of the cake mixture.
Bake in a preheated oven for an 60 -80 mins, or until a cocktail stick comes away clean when dipped into the centre (depends on banana size) if it starts to darken too quickly cover with foil.
