Spiced Apple Muffins

These are so deliciously light and dreamily satisfying, almost like a little pick me up in a tulip case. I used 3 dessert apples but I'm sure that they will work perfectly well with some windfall cookers. A great lunch time treat for pack lunch boxes but actually they would work anytime of day.
280g S/R flour
1/2 tsp bicarbonate of soda
1/2 tsp baking powder
180g caster sugar
3 small dessert apples
200ml milk
100ml double cream
1 tsp lemon juice
90g melted butter
1 egg
1 tsp of apple pie spice ( to make:-mix together 3 tsp of cinnamon, 1 tsp of ground nutmeg, 1 tsp cardamon 1 tsp of mixed spice, 1/2 tsp ground cloves) 

Preheat the oven 170˚c (fan)

In a large bowl sift the flour with the bicarb, baking powder, spice and sugar, peel and grate 2 of your apples and tumble into the flour. Now in a jug whisk together the milk, cream, lemon juice melted butter and egg. With a large metal spoon fold the wet ingredients into the dry, be careful not to over work at this stage. Peel the remaining apple and slice into 12 pieces.

Spoon the batter into 12 cases in a muffin tin and place the remaining apple pieces on the top. Bake in a preheated oven for 25-30 mins. Cool for at least 20 minutes before serving.
