Otis' Meatloaf birthday cake

It's my gorgeous puppy's birthday today. I genuinely can't imagine life without him, it's amazing how someone (I know he's not technically a person)  so small can have the hugest impact on a family. We are all totally smitten. I knew I would be but even Richard and the boys are too and as for Harley and Buddy, well they adore him.

Anyway how could he not have a cake. I didn't want to go down the sweet route as I am quite cautious with his diet. He has either chicken or beef with fresh veggies and I hand make treats for him too. So I thought why not use one of my gorgeous Bundt tins to make him a meatloaf cake. If you don't have a Bundt , firstly WHY? lol and secondly you could easily make this in a 2lb loaf tin.
500g minced beef (15% fat)
220g cooked and cooled diced veggies (I used broccoli, carrots and cauliflower)
2 slices of wholemeal bread
1 egg

Place all of the ingredients into a big bowl and squelch together with your hands until well combined. Press into either your bundt tin or loaf tin, bake in a preheated oven 190 for about 25-30 mins. Turn out and cool to room temp before slicing a chunk for your gorgeous pooch.

*This will last 4 days wrapped in foil in the fridge, or you can freeze half for smaller pooches.
