Auntie Helens Apple Cake

This is such a homely cake, it reminds me all things cosy. My Auntie Helen is someone who I think of with great fondness. Whenever you go to her home she makes you so welcome and always has something wonderful and homemade. This recipe has been passed around our family, mine isn't the original but my version of it.
125g Caster Sugar
125g stork
185g S/R flour
4 small dessert apples peeled and sliced
3 eggs
40ml double cream
A few drops of almond extract

Preheat the oven to 170˚c

Cream the sugar and stork together, then slowly add the eggs. Fold in the flour, cream and almond extract, lastly mix in the apple slices until well coated in the batter.

Bake in a greased and floured 9 inch springform tin at 170˚c for about 40-50 mins. Dust with icing sugar to serve.
