Pancakes

My boys love pancakes. When they were little 'till really recently it has been almost a Saturday ritual to have pancakes for brekkie. When I was young my friend Sonya and I would make pancakes and boil up a bottle of Britvic55 for our own variation on crepe suzette. We both still have happy memories of those days.

3 eggs
1 cup of plain flour
1 cup of milk
20g melted butter
pinch of salt

I find this a really simple method and the easiest way to make pancakes. Just use a cup (any sort of cup, tea, coffee mug. As long as you use the same for the flour and milk) of plain flour, a cup of milk and about 3 eggs about 20g melted butter a pinch of salt. 

Whisk them all together, I cook mine on the cooler AGA hotplate with a reusable mat, but they come out just as fab in a large non-stick frying pan brush with a little light oil. 

Ladle some of the batter into the pan or onto the mat, wait until the pancake has a dry appearance then flip over and cook until golden.

For the filling (A favourite of my family for dessert)
Spread a tablespoon of nutella over the pancake, heat a little knob of butter in a frying pan.
Spoon a scoop of Vanilla ice-cream into the centre, fold into a parcel and pop into the frying pan to seal the parcel, place on a plate throw a few flaked almonds into the pan and toast the sprinkle over the pancake serve immediately

Christmas Breakfast

In our house the Christmas Breakfast is as equally regarded as lunch. It is a huge tradition to have the full works. Pancakes, muffins, fruit, a full fry up (or AGA cook up in our case), presents on the table and generally lots of laughter.
The night before I like to get as much ready as possible because once everyone turns/wakes up in the morning chaos ensues.
  1. Lay the table.
  2. Put the tea/bags in the teapot.
  3. Pour milk into a jug.
  4. Make sure the sugar bowl is filled.
  5. Make the muffin, churros or pancake batters.
  6. Weigh out the scone ingredients.
  7. Line trays with reusable liners (If making bacon etc in the oven/AGA)
  8. Pour juices into glass jugs.
  9. Prepare fruit platter.
  10. Make the panettone to proving stage, then pop into the fridge to prove overnight.
I also like to add a small table present to the table, the sort of things I add are fun and inexpensive.
